You’re not alone in wanting to pick up your mixing bowl and wooden spoon since Bake Off came back on our screens. You’re also not alone in making a few more trips to the shops for cakes and biscuits to satisfy your sudden sweet tooth. To get you in the spirit and help make your bakes the talk of the town, we’re helping you to replicate the tricky Technical Bake of the week, with a few more instructions than you’d get on the show!
Fortune Cookies Method
Turn your oven to 130C (150C for a fan oven). Line a baking sheet with a silicone mat and write some fortunes on some small slips of paper ready to go inside your cookies.
Whisk the egg whites, oil and water together until frothy.
Sieve the flour, cornflour and salt in a bowl then stir in the sugar. Add the egg white mixture and beat into a smooth batter. Try not to get any air into the mixture if you can.
Place 2tbsp of batter onto the silicone mat, using the back of the spoon to swirl the mixture to make a circle around 9-10cm across. Do this twice, leaving plenty of space between each one. Bake for 10-12 minutes until the outer edge of each biscuit is light golden brown.
Remove from the oven and immediately lift one cookie up, place a fortune in the centre, fold in half and pinch the edge together to seal it. Holding these edges, gently bend the cookie vertically over the edge of a glass until it forms a fortune cookie shape.
Place the finished article in a muffin tin to help it keep its shape and move onto the second cookie before it gets too hard.
Repeat until you’ve used up all the batter. You can increase the number of cookies baking in the oven at once, but you’ll have to work fast to shape them before they set!
