Great Good Vibes Bake Off Molten Puddings

Molten Pudding Method:

Turn the oven to 200C/180C fan. Prepare six ramekins by greasing with butter and dusting with cocoa.

Melt the chocolate and butter in a bowl over a pan of simmering water or heat quickly in the microwave. Remove from the heat once melted and leave to cool slightly.

Whisk eggs, yolks and sugar in a large bowl until thick then fold in the melted chocolate mixture. Sieve the flour over and fold in. Take care not to overmix as you’ll knock the air out of the batter.

Divide the mixture equally between the six moulds.

If you’re looking for an alternative centre then you could divide two-thirds of the mix equally between the greased pudding moulds, before spooning in a heaped teaspoon of peanut butter or caramel into the middle of each. Add the remaining mixture.

Place the puddings on a baking tray and bake for 8-12 minutes until risen. They should wobble slightly and not be cracked.

Turn out onto a plate, serve and enjoy!
